Vacqueyras
With
its rich fruity nose, this full-bodied southern Rhone wine
is typical of this little known appellation. It has a spicy
taste with hints of violets and liquorice. Its complexity
and length make it a good wine to keep for 2-3 years. Open
2 hours before serving at around 18 degrees. Ideal with
game, rich meaty stews or meat cooked in sauce.

Domaine du Riboudon Brouilly 2000
Rich
and purplish in colour, it has a fruity nose against a spicy
background. It has a well-rounded and balanced taste. Serve
at 16 to 18 degrees with hot meaty sausages or escalopes.

Costieres de Nimes Rouge
Increasingly
popular, wines from the Costieres de Nimes are produced
from traditionally mediterranean grape varieties such as
Syrah, Grenache, Mourvedre, Carignan and Cinsault. From
the southern part of the Rhone Valley, you can feel the
sunshine in this wine. Ruby red in colour with shades of
purple, you can detect hints of red fruits, blackberry and
violets. Elegant and well-rounded. It can be enjoyed with
almost any meal but when young it is the perfect partner
for grilled meats and as it matures it goes particularly
well with red meats, casseroles and game. Serve at 16-18
degrees.

) Bourgogne 2000 Ch Rousseau
Made
from the Pinot Noir grape, this medium bodied wine is fresh,
generous and well rounded with a light ruby colour. Serve
between 15 and 16 degrees with a main course of chicken,
rabbit or pork or with rillettes to start.
